Meal Prep Baked Lime Chicken Bowls Recipes Dinner Healthy

Grilled chicken breast into pieces and season in hot salted water and then bake with quinoa and green beans to prepare healthy meals!

Ingredients

  • 2-3 lbs. boneless, skinless chicken breasts, cut into cubes
  • 6 Tbsp. olive oil
  • 3 Tbsp. red wine vinegar
  • Juice from 2 limes
  • 2 tsp. chili powder
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. kosher salt
  • fresh cracked pepper, to taste

Instructions

  1. In a large reusable bag, mix olive oil, vinegar, lemon juice, chili powder, sweet peppers, garlic powder, salt and pepper.
  2. Cut the chicken into cubes and add to the salt water. Throw to coat. Soak for two hours or a maximum of one night.
  3. Preheat oven to 400 ° F. Pour the seasoned chicken on a baking dish and bake in the preheated oven for 20 minutes, until the chicken is soft.
  4. Serve with cooked quinoa and lime green beans. Enjoy!
