Quick Keto Dinners So You Can Make a Low-Carb Meal in 30 Minutes or Less

INGREDIENTS:

  • ½ tsp coconut butter
  • 1 medium diced onion
  • 450- 500 g chicken fillets
  • 1 minced garlic
  • Two medium zucchinis
  • 400 g crushed tomatoes
  • 7-10 cherry tomatoes (chop half)
  • 100 g raw cashews* (for seasoning: turmeric, paprika, and salt)
  • For seasoning: salt, pepper, dry oregano & basil

INSTRUCTIONS:

  1. Heat a large skillet over medium to high heat. Add coconut butter and chopped onion. Allow it to boil for 30 seconds to 1 minute. Be sure not to burn onions.
  2. Cut the chicken into two pieces.
  3. Add chopped chicken and garlic to the pan. Season with basil, salt and pepper. Cook chicken for 5-6 minutes or until golden brown.
  4. While cooking chicken, make zucchini. Cut it shorter if necessary. If you do not have a special spiral spiral, just use your peeling tool and make strips of zucchini.
  5. Add the ground tomatoes and simmer for 3-5 minutes.
  6. Cook the cashew nuts in another pan (or oven) until golden brown. Add the sweet pepper, turmeric and salt.
  7. Finally, add the spiral noodles and cherry tomatoes and season with excess salt if necessary. Cook for another minute and then turn off the fire.
  8. Serves chicken bread with hazelnuts with freshly baked cashews and basil. Enjoy!
