When I had some Greek Yogurt in the fridge and wanted to try to find the best recipe for Greek Yogurt Chicken Salad, I knew that this tried and true recipe would be the one, and boy did it not disappoint!
Ingredients
- 3 chicken breasts, shredded or chopped (about 3 cups)
- 1 cup celery, finely chopped
- 3 green onions, chopped
- 1 cup grapes, quartered
- 1/2 cup slivered almonds
- 1 tsp fresh parsley
- 1 cup plain greek yogurt
- 2 tbsp fresh lemon juice
- 1 packet (.7 oz) Good Seasonings Italian dressing mix -OR- 2 Tbsp Homemade Italian Dressing Mix (see note)
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Combine the chicken, celery, green onions, grapes, almonds, and parsley in a large bowl.
- In a small bowl, combine the greek yogurt, lemon juice, Italian dressing mix, salt and pepper and mix until combined.
