INGREDIENTS:
- ½ tsp coconut butter
- 1 medium diced onion
- 450- 500 g chicken fillets
- 1 minced garlic
- Two medium zucchinis
- 400 g crushed tomatoes
- 7-10 cherry tomatoes (chop half)
- 100 g raw cashews* (for seasoning: turmeric, paprika, and salt)
- For seasoning: salt, pepper, dry oregano & basil
INSTRUCTIONS:
- Heat a large skillet over medium to high heat. Add coconut butter and chopped onion. Allow it to boil for 30 seconds to 1 minute. Be sure not to burn onions.
- Cut the chicken into two pieces.
- Add chopped chicken and garlic to the pan. Season with basil, salt and pepper. Cook chicken for 5-6 minutes or until golden brown.
- While cooking chicken, make zucchini. Cut it shorter if necessary. If you do not have a special spiral spiral, just use your peeling tool and make strips of zucchini.
- Add the ground tomatoes and simmer for 3-5 minutes.
- Cook the cashew nuts in another pan (or oven) until golden brown. Add the sweet pepper, turmeric and salt.
- Finally, add the spiral noodles and cherry tomatoes and season with excess salt if necessary. Cook for another minute and then turn off the fire.
- Serves chicken bread with hazelnuts with freshly baked cashews and basil. Enjoy!
